The only thing I've missed is the audio. Would be nice to hear the fight :D But anyway kinda nice entry

I built up some mud around a ball of gold but then it was suddenly gone. Do the knights take down structures?

Yes, the knight will steal your gold, even if it is inside a block of dirt. It can dig.
Grrrr, why can't that knight just let me hoard the gold, it's not like he has any use for it either >:(. I wonder what the most effective way of playing this would've been, couldn't really protect my gold for all that long. Movement felt a bit wonky probably due to the large hitbox of the player character and combat was a tad annoying with the knockbacks and stuff. Solid entry though, had me defending that ball of gold to my last breath... Or whatever it is that ghosts do :P.
