Love the concept! Reminds me of Death Road To Canada but with vehicle gameplay. Even without real enemies it feels really fun to mess with the cars laying around as well as run over the little zombies. I can definitely see it becoming a great game if you do get to work on it a bit more with the ideas you had, I'd love to see more for sure :)
I don't know if it was what you were thinking on but maybe it would be more interesting to not focus on rpg-ish mechanics with stat upgrades and such and instead add to the fun car movement with more obstacles and things to play with and ragdoll around the map, and maybe make upgrades that change the way you move or give you movement abilities or such, instead of them just giving you more damage or durability or something. Just a thought!
